3 cups cold water 3 cups = 750 mg
1 head broccoli
1 handful spinach
1 green onion
1 sprig basil leaves
3 cloves garlic
8 tbl light thickened cream
1/2 cup milk
0.7 oz butter 0.7 oz = 20 g
1 tbl olive oil
3 tbs flour
to taste salt
to taste pepper

Place casserole with cold water into the stove on medium heat. Bring it to boil. Chop broccoli, spring onions, garlic and basil leaves.


In a sauce pan melt half of butter. Add 1 tablespoon of oil. Once it is hot add finely chopped broccoli with garlic. Sauté till tender.


Transfer broccoli, spinach and green onions in a casserole with water. Cover the casserole. Simmer for 15-20 minutes until the broccoli is cooked nice and soft. In another pan melt one tablespoon of butter. Add flour. Fry for a few seconds. Add milk and cream. Stir nicely and add to broccoli soup. Boil for a few minutes.


Grind broccoli mixture to the smooth texture with a blender. Add salt and black pepper to taste. Volia, your creamy broccoli soup is ready to serve!

Thank goodness…high fiber that doesn’t involve another bowl of cereal…sigh. This soup looks awesome…I definitely will enjoy making it.
