1 head broccoli
1 handful spinach
1 spring onion(s)
1 sprig leaves basil
3 cloves garlic
8 tablespoons cream light thickened (can be substituted with vegan coconut cream)
0.5 cup milk can be substituted with vegan coconut milk
1 ounce butter 25 grams
1 tablespoon olive oil
3 tablespoons flour
to taste salt
to taste pepper

      Prepare ingredients

      Place casserole with cold water into the stove on medium heat. Bring it to boil. Chop broccoli, spring onions, garlic and basil leaves.

      Cook broccoli

      In a sauce pan melt half of butter. Add 1 tablespoon of oil. Once it is hot, add finely chopped broccoli with garlic. Sauté till tender.

      Cook soup

      Transfer broccoli, spinach and green onions in a casserole with water. Cover the casserole. Simmer for 15-20 minutes until the broccoli is cooked nice and soft.

      In the meantime, melt one tablespoon of butter in another pan. Add flour. Fry for a few seconds. Add milk and cream. Stir nicely and add to broccoli soup. Boil for a few minutes.

      Finish soup

      Grind broccoli mixture to the smooth texture in a blender. Add salt and black pepper to taste.

      Serve & Decorate

      Pour soup into soup bowls and decorate with extra spoon of cream. You can drop cream onto the soup in a circle and make nice hearts using a toothpick. This is a small trick that can make your soup look extra nice and more fun to eat.
