This butter sponge cake is very light and is perfect to serve with glazed fruits or icing sugar on top. I’ve chosen icing sugar this time, but you can easily swap it on Step #7 “Decorate” with fruits, cacao powder, etc. The sponge cake is especially delicious with a cup of black tea or coffee.

Separate egg yolks from whites into different bowls.
Make Cake Dough
Start with butter by melting it and leaving aside to cool. Then gradually beat sugar into egg yolks and add vanilla extract. In addition, continue to beat the mixture for several minutes until it becomes thick and, as a result, pale yellow.
Beat egg whites and salt together in a separate bowl until soft peaks are formed. Then sprinkle on sugar and beat until stiff peaks are formed.
Start to add egg whites mixture with two-thirds of flour into egg yolks and mix slightly all of these ingredients together. Then add the remained flour and mix everything nicely.
When the cake dough is ready, transfer it into a prepared cake tin greased with a little bit of butter. Next, place the cake into a preheated 350 °F (175 °C) oven and bake for 30-35 minutes.
Let It Rest
Remove the cake from the oven and allow to rest in the pan for 6-8 minutes. Sprinkle icing sugar powder on top.
