This Butter Spongecake or Biscuit au Beurre is a very special recipe. Not only it is a great cake to make any time of the year, but it is perfect for a special occasion, too. By using just a few tools you can transform this spongecake into the Valentine’s Day cake, Anniversary cake, you name it, in just a few minutes!
Perfect for Valentine’s Day
This time I will use this recipe to make a simple Valentine’s Day treat.

How may times have you stressed about making something special on the Valentine’s Day? And how many times have you spent hours looking for that “special” recipe just to find out that it takes too much time to make? This butter spongecake recipe is exactly opposite. It is quick, easy to make and will take you minimum efforts to achieve that wow factor. Together with Vanilla Affogato, it is a great recipe to make your loved one’s day even more special!
This butter spongecake is very light and is perfect to serve with glazed fruits or icing sugar on top. I’ve chosen icing sugar this time, but you can easily swap it on Step #7 “Decorate” with fruits, cacao powder, etc. The spongecake is especially delicious with a cup of black tea or coffee.

Separate egg yolks from whites into different bowls.
Make Cake Dough
Start with butter by melting it and leaving aside to cool. Then gradually beat sugar into egg yolks and add vanilla extract. In addition, continue to beat the mixture for several minutes until it becomes thick and, as a result, pale yellow.
Beat egg whites and salt together in a separate bowl until soft peaks are formed. Then sprinkle on sugar and beat until stiff peaks are formed.
Start to add egg whites mixture with two-thirds of flour into egg yolks and mix slightly all of these ingredients together. Then add the remained flour and mix everything nicely.
When the cake dough is ready, transfer it into a prepared cake tin greased with a little bit of butter. Next, place the cake into a preheated 350 °F (175 °C) oven and bake for 30-35 minutes.
Let It Rest
Remove the cake from the oven and allow to rest in the pan for 6-8 minutes. Sprinkle icing sugar powder on top.
Use a sheet of white paper, cut hearts from it, place it on the spongecake and sprinkle with icing powder. Take out the paper and you will see those cute little hearts. If you want to use less icing sugar, start with one teaspoon and then sprinkle gradually. You may use glazed fruits, cacao powder or any other decoration, too. Cut and serve.
