This Chicken Feta Strawberry Salad recipe is the perfect example of a healthy ensemble of berries, herbs and nuts, paired with delicious chicken!
|2 boneless breasts of chicken|
|1 cup of fresh basil|
|6 sprigs of thyme|
|1/4 cup leaves of coriander|
|2 small cucumber(s)|
|1 head romaine salad|
|1 cup leaves of baby spinach|

|8 medium thinly sliced radish(es)|
|1/2 cup peanut(s)|
|1/2 cup edible flowers|
|1/2 tsp salt|

|1/2 tsp paprika|
|1/2 tsp dry basil|
|4 oz sliced Feta cheese|
|1 tbsp honey|
|2 tbsp apple cider vinegar|
|2 tbsp cold water|

In a bowl, combine chicken breasts, olive oil, thyme, paprika, salt and pepper. For added flavor, allow the chicken to marinate for 1 hour or overnight.
Preheat your grill, grill pan or cast iron skillet to medium high heat and brush the grates with oil.
Grill the chicken for 5-8 minutes per side or until the chicken is cooked through. Remove from the grill and slice the chicken thinly.
In a large salad bowl, toss together lettuce, spinach, strawberries, radishes and cucumbers. Add the chicken on top of the salad along with the spiced feta, peanuts, coriander leaves, thyme sprigs and edible flowers. Serve with the dressing.
Prepare Honey Apple Cider Dressing
In a glass jar, combine olive oil, water, apple cider vinegar, honey and a pinch of salt and pepper each. Seal the jar and shake well. Taste and adjust seasonings as needed.
