1 oz butter 20 g
to decorate coriander a few leaves
2 scallions spring onion

This potato leek soup is a perfect and easy French soup. It doesn’t require too much work or specific skills. This soup has a very nice color and texture. This is a staple in French cuisine.

The biggest challenge is to boil these two ingredients. Haha, you may feel their funny smell for 20 minutes. But, it will go away after 20 minutes or so. And right after, you will have a perfect soup. 😉

What is the origin of this soup?

This potato leek soup can be vegan or vegetarian. You may serve it with cream, cheese, a little bit of butter, or a drizzle of olive oil. And don’t forget about a piece of fresh bread. I love to add some greens to decorate the soup.  You probably don’t know that another name for this soup is Potage Parmentier. This name comes from France after the French agronomist Antoine Parmentier.

How long this potato leek soup can be stored?

This soup is a healthy dinner option that you can enjoy any time of the year. Prepare a big pot and leave it in the fridge for 3-4 days. After that, you just need to reheat the soup and serve it with toast. Personally, I love to serve soups with different toppings and I always make soup for a few days. I have one soup recipe which tastes better on the second day. I am not going to share this recipe right now, because it deserves a special and proper place on the blog in the soup section. But, this easy potato leek soup is a favorite soup in my family. It is rich in taste, excellent in texture, and healthy healthy healthy!

This fancy watercress soup has its root from today’s potato leek soup.  For example, if you add watercress to leek and potatoes – you will get a watercress soup. Easy, right? Also, you can add cauliflower or broccoli, green beans, or even carrots. So, don’t be afraid to experiment with vegetables. With each ingredient, you will get a new taste and a fantastic look. Prepare potatoes

Start with the potatoes. Wash them, peel them, and slice.

Place a casserole

Place all vegetables into the casserole with cold water.

Cook soup

Simmer the soup, partially covered for 45-55 minutes until the vegetables are tender. Turn off the heat and leave the casserole.
💪 Tip: Vegetables have a richer taste when they are left in a covered casserole. That’s why leave the half-ready soup on the stove for 10 more minutes.

Blend soup

Chop the spring onion and prepare coriander leaves (you may skip adding them, if you are not a fan of taste). Place the soup in a blender and add the cream with butter to it. Blend the soup.
