While oven-baked fries are a timeless comfort food suitable for any season.

I love to make them any time I want something really delicious and healthy!

Not only are my Mediterranean Oven Baked Fries bursting with flavor, but they also offer a lot of health benefits.

Potatoes are a rich source of vitamins and minerals, including potassium, vitamin C, and fiber, which promote heart health and aid digestion.

Additionally, olive oil, is a staple of the Mediterranean diet, but you already know that. 🙂 My recipes are filled with olive oil.

The herbs and spices add depth of flavor and potential health benefits, such as anti-inflammatory properties from rosemary and oregano.

Wash the potatoes thoroughly under the running water. You can peel them if desired.

In a large mixing bowl, combine the potato slices with olive oil, salt, pepper, chili flakes (if preferred), rosemary, and oregano. Toss well to coat the potatoes evenly with the seasoning mixture.

Arrange the seasoned potato slices in a single layer on the prepared baking sheet.
