Today we are going to cook Peaches, Tomatoes, Quinoa Salad with you. And before we start a bit about its main ingredient – quinoa.
Quinoa is a common name for Chenopodium quinoa of the flowering plant family Amaranthaceae. It is grown as a grain crop for its edible seeds.
Quinoa is gluten-free, high in protein and one of the few plant foods that contain all essential amino acids. It is also high in fiber, magnesium, B-vitamins, iron, potassium, calcium, phosphorus, vitamin E and various antioxidants.
To cook quinoa, simply stir it into the boiling water or broth, cover and simmer over low heat until done. The ratio is 1 regular cup of uncooked quinoa to 2 cups of water. That’s it.

Put quinoa to the casserole and cook for 6-8 minutes in hot water. After that, transfer to the plate and wait until it cools off.
Wash green salad leaves. Cut tomato, peach into small pieces.
Transfer tomato and peach pieces to the bowl, add olives, salad leaves, lemon juice, sunflower oil, salt and pepper. Mix all ingredients together. Salad is ready!
