Today we are going to cook Peaches, Tomatoes, Quinoa Salad with you. And before we start a bit about its main ingredient – quinoa.
Quinoa is a common name for Chenopodium quinoa of the flowering plant family Amaranthaceae. It is grown as a grain crop for its edible seeds.
Quinoa is gluten-free, high in protein and one of the few plant foods that contain all essential amino acids. It is also high in fiber, magnesium, B-vitamins, iron, potassium, calcium, phosphorus, vitamin E and various antioxidants.
To cook quinoa, simply stir it into the boiling water or broth, cover and simmer over low heat until done. The ratio is 1 regular cup of uncooked quinoa to 2 cups of water. That’s it.

1 Done | Put quinoa to the casserole and cook for 6-8 minutes in hot water. After that, transfer to the plate and wait until it cools off. |
2 Done | Wash green salad leaves. Cut tomato, peach into small pieces. |
3 Done | Transfer tomato and peach pieces to the bowl, add olives, salad leaves, lemon juice, sunflower oil, salt and pepper. Mix all ingredients together. Salad is ready! |
