Ukrainian cuisine is rich and versatile. It boasts of vegetables, meat, fish and a myriad of salads & dips. This purple beetroot dip is a great example of a simple dish that is quick to make and healthy.
Greek Yogurt Instead of Mayonnaise
A classic version of this dip usually requires mayonnaise. But we prefer making it a bit healthier and therefore use Greek yogurt instead. We found that yogurt can be a great substitute for many mayonnaise-based dishes like this dip 😉
Beetroot or Buriak
Fun fact: Beetrot in Ukrainian is buriak or буряк. Beetroots are widely used in the Ukrainian cuisine. And in case you love them too, here is another great Ukrainian dish made of purple beetroot that you can try – Vinehret.

Prepare Ingredients
Prepare the ingredients.

Bake beets
Bake your beetroots in foil in a 350 °F oven (180 °C) until they become tender. I had small beetroots, and it took me around 30 minutes to prepare them.
Tip: Prickle them with a knife. Beetroots are ready when they become soft. Leave them on a plate.
When ready, wait for approximately 20 min until the beetroots cool off.

Grate beetroots
Peel the beetroots from the skin and grate them on a grater. You may also use chopper in case you don't like to grate.

Add Other Ingredients
Add yogurt, grated garlic, salt, pepper and mix all ingredients. Aim for a smooth and nice texture. Transfer into a bowl.

Decorate (optional)
Decorate with chopped spring onion.

Alternative
You can also make this beetroot salad with sunflower oil. Olive oil will work great, too. Just add 3 tbsps of it instead of the Greek yogurt and mix with salt, pepper and grated garlic.
