1 Done 10 min | Prepare ingredientsPlace casserole with cold water into the stove on medium heat. Bring it to boil. Chop broccoli, spring onions, garlic and basil leaves. |
2 Done 5 min | Cook broccoliIn a sauce pan melt half of butter. Add 1 tablespoon of oil. Once it is hot, add finely chopped broccoli with garlic. Sauté till tender. |
3 Done 20 min | Cook soupTransfer broccoli, spinach and green onions in a casserole with water. Cover the casserole. Simmer for 15-20 minutes until the broccoli is cooked nice and soft. |
4 Done | In the meantime, melt one tablespoon of butter in another pan. Add flour. Fry for a few seconds. Add milk and cream. Stir nicely and add to broccoli soup. Boil for a few minutes. |
5 Done 3 min | Finish soupGrind broccoli mixture to the smooth texture in a blender. Add salt and black pepper to taste. |

The calendar tells me that we’re well into Spring, but when I look out the window I still see piles of snow (6 inches just last night).
