Ingredients

2 breasts of chicken boneless, skinless
3 tbl butter divided
4 cloves garlic
1 cup stock of chicken
1 cup heavy cream
1/4 cup dry white wine
3 tbl lemon juice
1/2 teaspoon dried thyme
2 sprigs parsley
2 cups baby spinach washed
to taste salt
to taste fresh cracked pepper

Preheat oven to 380 degrees Fahrenheit. Season lightly the chicken with salt and pepper. Set aside for 3-5 minutes.

Heat the butter in a large, heavy pan. Add the chicken, and then fry until lightly brown. Transfer chicken to a RockCrok or cast iron skillet, add chicken stock, heavy cream, white dry wine, dried thyme, spinach, salt and plenty of freshly ground black pepper. Mix all together in the RockCrok. Place RockCrok in the oven and cook for about 45 minutes.

Remove the dish from the oven add lemon juice to taste and let sit for about 5 minutes before serving.

Decorate with lemon pieces and parsley.
