Homemade Apple Cake is a delicious dessert that is perfect for any celebratory occasion.

When I think about apples, I always remember the expression I learned when I was in school: ‘One apple a day keeps a doctor away‘. Well, you can modify this expression to apple juice, apple pie, apple cake, you name it! 🙂

In additional to being healthy, a homemade apple cake can be a tasty and sweet treat. You can serve it with a dollop of vanilla ice cream or a spoon of Greek yogurt.

However, if you are looking to make your apple cake even healthier, you can try using whole wheat flour for the dough, reducing the amount of sugar in the filling, and adding some honey or agave syrup.

This apple cake does have a fantastic taste, apples are super soft and tender inside. The icing topping is a gorgeous and simple decoration for this cake, especially if you don’t serve it with ice cream.

What Kind Of Vitamins Are In Apples?

Apples are a good source of several vitamins and minerals, including:

  • Vitamin C: Apples are a good source of vitamin C, help the body absorb iron, and they act as an antioxidant to protect cells from damage.
  • Fiber: Apples are a good source of dietary fiber, which regulates blood sugar levels, and reduces cholesterol levels.
  • Vitamin K: Apples contain vitamin K, which is important for blood clotting and bone health.
  • Vitamin B6: Apples contain small amounts of this vitamin, which helps support brain function and the production of red blood cells.

How Many People Can Serve This Homemade Apple Cake?

Serve this cake for 4-5 people.

What Type Of Apples To Use?

In this recipe, I used beautiful Pink Lady Apples. You can use any type of apple, that you have at home.

If you use Granny Smith apples, make sure to add a little more sweetness (sugar, agave syrup, or honey) to the mixture. If you skip this, you will get more acidity from apples in a cake.

Why do I need to leave apples to soak?

Usually, if you mix apples (sour apples) with sugar, they will start giving some juice. If you keep the juice from the apples and add it to the batter, the cake will be a little soggy on the bottom.

But, if you give the apples at least 5-10 minutes to soak, get rid of the juice, and transfer only apple slices, the apples will be somewhere in the middle of the cake.

Peel and Cut Apples

Peel and cut apples into thin slices. Add 2 tablespoons of brown sugar to apple slices and place into a bowl, then, set aside for 5-10 minutes. Apples will soak up.

Mix ingredients

Meanwhile, heat the oven to 350 degrees Fahrenheit (170 degrees Celsius). Mix the rest of sugar and vanilla sugar, with softened butter and whip it until you get creamy and light texture. Add eggs and whip everything together. Lastly, add flour to the mixture and whip it. You will get some nice batter.

Prepare and bake

Take 4-5 tablespoons of batter and even up on a non-sticky oven tray. Then place the second layer - apple slices. The last layer is batter again. Hence, transfer the batter onto apple slices and accurately even it up. Then place into the oven and bake on fan-bake mode for 40 minutes.

Rest

Take the lightly brown cake out and leave to cool it off. Decorate it with icing sugar on top.
